Hi there!
Sometimes we get in a rut and don't know what to eat for dinner, breakfast, lunch or snack and it gets a little boring. I enjoy taking any recipe and tweeking it so that whole natural ingredients are used and it is healthy. I have to admit that I don't use recipes all the time, I eyeball a lot of things and taste test. Some of my recipes on here I just thought about in terms of measurements so feel free to be an explorer and try and taste your way through your cooking! I promise that eating clean whole foods can taste great and make you feel just as wonderful! What about Sweet Potaters as chips!!!!
***you read that correctly! rinse off those bad boys and slice them up to use as chips. you won't be sorry*** healthy and yummy option for chip lovers everywhere
Gluten Free Flour Free Super yum Muffins
My Sister and Law gave me this recipe and it is like eating cupcakes. I have to disclose that I am not a gluten free or any other lifestyle diet girl I just love clean eats!!! So if I find a good recipe from any origin its a go!!
1c All Natural Peanut Butter
2 very ripe smashed bananas
1/4c pure maple syrup
1/3c unsweetened cocoa
**optional** choc chips
I also tossed in two scoops of my chocolate protein powder and added a tiny bit of water
cook at 350 for 15 minutes
makes about 6 muffins
Black Bean goulash on flat bread
this was a surprise conglomeration that was yummy and easy!
flat bread
1c whole wheat pastry flour
2T coconut oil maybe more check consistency
1t baking powder
1t salt
eyeball amounts of warm water until it can be mixed with out being sticky
mix/knead create little golf ball size balls and roll with a rolling pin
cook on medium heat in skillet
**they cook fast and don't stick**
at the same time if your a multi tasker like myself
in another large skillet
melt 1-2 T butter or desired oil
add sliced onions
sliced bell peppers
2 cloves garlic
1/2 box sliced mushrooms
2 grated carrots
1c black beans
serve with salsa and sliced avocado for super delish time!

1 rinsed can of chickpeas or some people have told me they use sweet potatoes!
2 cloves garlic

a splash of water
1 jalepeno (seeds removed, you can do this with a small teaspoon)
1/2 red bell pepper
I add the chickpeas last so that the liquid is on the bottom and it can blend better. Process for a minute or so and eat!

White Chicken Chili
1lb Boneless Skinless Chicken Breast diced and cooked on medium heat in skillet or wok type pan
**while chicken is cooking, chop remaining ingredients and rinse beans and green chili
Then when Chicken is white (cooked) add the following:
2T butter (real unsalted butter)
2c or cans pinto beans rinsed
1c or can white northern beans rinsed
Three medium green chilies diced
1/2 diced yellow onion
Then once that has softened the onions add the 1 1/2c chicken broth
1t cumin
1t oregano
simmer for ten minutes and then ready to serve
Garnish with fresh chopped avocados, cheese, and salsa

Butternut Squash Soup with optional Breadsticks
This recipe takes a while but the end result is totally worth it!
1 large Butternut Squash :cut lengthwise (steamed either in the oven @425 for 30-40 minutes) or I usually use the microwave with a glass baking dish cutting it into quarters and adding just enough water to cover the bottom of the dish and then cover and place in the microwave for 17 minutes. Then use a spoon to take the meat out of the squash leaving the skin to throw away or compost.
1 medium size apple ( I chose pink lady)
1/2 yellow onion chopped
^^^throw the above ingredients with your cooked butternut squash and your water or almond with in your food processor and blend) 2 1/2c water
2 1/2c chicken broth
1/2c Almond milk
1T Terregon
1 1/2 t sea salt
1/2 t crushed black pepper
2T butter
Heres how I did this: I steamed the squash and apples at the same time then used the water mixture first in the blender with the apples and half he squash blending until smooth. Then, I took the remainder of the squash and the onions with the chicken broth and blended that in my blender. Poor all of it into a stock pot and cook on medium heat with the butter and spices until simmering and serve!
I also made some simple breadsticks below while all this was going down.
Preheat your oven to 400 with 2T butter on the cookie sheet
1 1/2c warm water mixed in a large bowl with 1T yeast and 2T honey (or sugar, I use honey)
Then add 3c Whole Wheat Pastry Flour
knead with your hands when it gets to the point that you cannot stir it.
***Take the cookie sheet out and roll the butter around so it coats the pan***
Make little 2 inch balls and roll them in between your hands into sticks
Roll the sticks in the butter on the pan and sprinkle them with sea salt
**You may want to add more butter to the top of the breadsticks right when you take them out of the oven. I didn't but it would have been better!**
bake for 10-12 minutes

Not for Dinner Granola (If you want, you could eat it for dinner)
I made some really Yummy things this weekend! Heres a granola recipe to kick your week off: be creative and go out on a limb, add whatever floats your boat...
Preheat oven to 325
In a large bowl mix:
3c Natural Whole Grain Oats
1c Raw Hemp Hearts (high in essential fats and omegas)
1.5c Raw whole Almonds plain
1/2c Organic Quinoa
2T Chia Seeds
2T Flax Seeds
Toss the above ingredients in the following ( I just use a 1c cup and mix these in there first)
1/2 coconut oil
1/4c honey or agave or maple syrup whatever you want
1T Vanilla
In a large bowl mix:

BAM yummy granola made by you in your kitchen. We eat this as our "cereal" with almond milk (I eat it with peanut butter.. surprise) since we don't buy that nonsense at our house (its pencil shavings) .

Zucchini Lasagna Noodles
Have you ever thought of switching it up with home made lasagna?
How about using strips of green/yellow zucchini for your noodles?
Here's a little tip: Use the cheese slicing part of your cheese grater and slice the zucchinis long lengthwise to create your noodles then arrange them in your casserole dish like your usual noodles. use foil to cover the top and bake at 375 for anywhere from 40-60 minutes. You now take a step out by not having to boil your noodles and its better for you in the end!
*** cheese tip*** do not buy pre shredded cheese it has a chemical in it to preserve it....cheese is suppose to be made out of milk. I know it can be time consuming, but take the time to prepare your food clean and fresh and you and your body will be delighted!

You will need:

Organic bread crumbs (italian perhaps or just add dried parsley oregano, garlic powder,salt and pepper)
egg whites about 4
2 lbs of chicken (2-3 full size boneless skinless cut slim wise in half) thawed
1 jar organic tomato basil sauce ( i found some at costco, just make sure to use a sauce that is strictly tomatoes herbs and spices NO HFCS)
Put your
for the noodles I used spaghetti squash and I prepare it by taking a large pyrex dish and adding about 1/4 inc water to the bottom. Cut the squash lengthwise (long) in half, spoon scoop the seeds out and place face down in the water. Cover with plastic wrap and microwave for 12-13 minutes. remove and use a fork to run inside the squash it creates noodle like strings.

the side I chose tonight was halved brussels sprouts sprayed with extra virgin olive oil ( Sprayer by Pampered Chef, no aresol hand pump) sea salt and cracked pepper with sliced white onions. I placed all on the same cooking sheet with the chicken side by side and cooked all of it for about 25 minutes.

You can use it in place of your mashed potatoes by steaming it and then blending in a food processor or blender.
You can do cauliflower rice by steaming it** I steam mine with glad lock veggie steam-bags or if you don't have those you can also take a glass dish or bowl with 1/2 inch water and cut up the cauliflower. place a sheet of plastic wrap over top and cook for 5-6 minutes.** when this is done get a fork and just break apart all the pieces into a rice like mixture. Add real butter, olive oil or what ever flavoring matches your fancy and don't forget the sea salt and cracked pepper yum!
There are also times where I choose not to steam any of my veggies and I just feed them to my family raw. It makes for a nice switch up
and one other recipe an awesome friend introduced to me is
Cauliflower Alfredo which will have to be another post in itself but is entirely yummy!

1/2 medium sized onion diced
2 cloves garlic
2 grated carrots ( I just used the cheese grater)
3/4c uncooked quinoa
one fresh jalapeno diced
salt and pepper to taste
I also like to add red pepper flakes for a little spice
preheat oven to 375
cut tops off the peppers and scoop out the insides (this creates your pocket for the meat)
in a mixing bowl add ingredients above and mix well by hand.
add about 3/4c or whatever will fit into each hollowed pepper
**be sure to grease your pan because as the peppers cook they have quite a bit of moisture**
cook at 375 for 25-45 minutes or until tops are light brown
in the same pan if you are using a large pyrex dish you can also cook your side veggie ie. Asparagus, seasoned sweet potatoes
