Have you ever thought of switching it up with home made lasagna?
How about using strips of green/yellow zucchini for your noodles?
Here's a little tip: Use the cheese slicing part of your cheese grater and slice the zucchinis long lengthwise to create your noodles then arrange them in your casserole dish like your usual noodles. use foil to cover the top and bake at 375 for anywhere from 40-60 minutes. You now take a step out by not having to boil your noodles and its better for you in the end!
*** cheese tip*** do not buy pre shredded cheese it has a chemical in it to preserve it....cheese is suppose to be made out of milk. I know it can be time consuming, but take the time to prepare your food clean and fresh and you and your body will be delighted!

Hi there!
Sometimes we get in a rut and don't know what to eat for dinner, breakfast, lunch or snack and it gets a little boring. I enjoy taking any recipe and tweeking it so that whole natural ingredients are used and it is healthy. I have to admit that I don't use recipes all the time, I eyeball a lot of things and taste test. Some of my recipes on here I just thought about in terms of measurements so feel free to be an explorer and try and taste your way through your cooking! I promise that eating clean whole foods can taste great and make you feel just as wonderful! Chicken Parmesan
You will need:
If you prepare the chicken first then while it is in the oven you can do the noodles or spaghetti squash if you choose ( i do!)
Organic bread crumbs (italian perhaps or just add dried parsley oregano, garlic powder,salt and pepper)
egg whites about 4
2 lbs of chicken (2-3 full size boneless skinless cut slim wise in half) thawed
1 jar organic tomato basil sauce ( i found some at costco, just make sure to use a sauce that is strictly tomatoes herbs and spices NO HFCS)
Put your
for the noodles I used spaghetti squash and I prepare it by taking a large pyrex dish and adding about 1/4 inc water to the bottom. Cut the squash lengthwise (long) in half, spoon scoop the seeds out and place face down in the water. Cover with plastic wrap and microwave for 12-13 minutes. remove and use a fork to run inside the squash it creates noodle like strings.
after you start the microwave put your sauce in a small saucepan on medium low heat. ** I like to add diced mushrooms and bell peppers to mine)
the side I chose tonight was halved brussels sprouts sprayed with extra virgin olive oil ( Sprayer by Pampered Chef, no aresol hand pump) sea salt and cracked pepper with sliced white onions. I placed all on the same cooking sheet with the chicken side by side and cooked all of it for about 25 minutes.

Cauliflower Options
there are a few different ways to prepare cauliflower.
You can use it in place of your mashed potatoes by steaming it and then blending in a food processor or blender.
You can do cauliflower rice by steaming it** I steam mine with glad lock veggie steam-bags or if you don't have those you can also take a glass dish or bowl with 1/2 inch water and cut up the cauliflower. place a sheet of plastic wrap over top and cook for 5-6 minutes.** when this is done get a fork and just break apart all the pieces into a rice like mixture. Add real butter, olive oil or what ever flavoring matches your fancy and don't forget the sea salt and cracked pepper yum!
There are also times where I choose not to steam any of my veggies and I just feed them to my family raw. It makes for a nice switch up
and one other recipe an awesome friend introduced to me is
Cauliflower Alfredo which will have to be another post in itself but is entirely yummy!

1lb ground turkey
1/2 medium sized onion diced
2 cloves garlic
2 grated carrots ( I just used the cheese grater)
3/4c uncooked quinoa
one fresh jalapeno diced
salt and pepper to taste
I also like to add red pepper flakes for a little spice
preheat oven to 375
cut tops off the peppers and scoop out the insides (this creates your pocket for the meat)
in a mixing bowl add ingredients above and mix well by hand.
add about 3/4c or whatever will fit into each hollowed pepper
**be sure to grease your pan because as the peppers cook they have quite a bit of moisture**
cook at 375 for 25-45 minutes or until tops are light brown
in the same pan if you are using a large pyrex dish you can also cook your side veggie ie. Asparagus, seasoned sweet potatoes
